Outside the town of Tusa, Sicily is a small farm that produces Ricotta Chese

Ricotta comes out of the heated tank, and is placed warm in the containers.

It is ready to be cooled and capped.

The main vat is visible in the back.

They also make Provolone.

If you can;t eat it you can wear it.

Tasting time. It was good, Ricotta and Provolone, delicioso.

This is a working farm, worth the visit if you are in the area.
